Recipe | Baked Sushi

Ingredients

  • 12 sticks of imitation crab

  • 8 dried shiitake mushrooms

  • 1 container of tobiko/masago

  • 1 cup of mayonnaise

  • 1 cup of sour cream

  • furikake

  • 1-2 tablespoon of sriracha

  • 4 Packets of nori

  • 3 cups of cooked rice

Directions:

step 1

Soak dried shiitake mushrooms in water for 4 hours. I recommend soaking them overnight if you can. The longer the mushrooms soak the better.

Step 2

Chop imitation crab and place into a bowl. Be sure to break up imitation crab so it is not stuck together.

Step 3

Remove shiitake mushrooms from water, and squeeze out excess water. Then finely chop and place the mushrooms into the bowl with the imitation crab.

Step 4

Add mayo, sour cream, sriracha and masago into the bowl and mix.

Step 5

In a glass 9” x 12” pan add a layer of rice.

Step 6

Sprinkle a light layer of furikake over the rice.

Step 7

Pour sushi bake mixture in the bowl on top of the layer of furikake and rice, and spread evenly.

Step 8

Bake at 400 degrees for 20 minutes.

Step 9

Then broil on high or 500 degrees for about 5 minutes. Watch over baked sushi for this step you do not want to burn the topping.

Step 10

Remove from oven and serve. Serve with nori on the side. You can also add avocado, ginger or sriracha.
